A foie gras aficionado’s dream, Au Torchon is a traditional ancient preparation. Fresh foie gras is seasoned with salt and pepper and marinated in Sauternes wine. Once the flavors are infused, the foie gras, tightly wrapped in a towel, is delicately poached in duck consomme. It is one of the most unadulterated foie gras preparations possible. Sliced into perfect rounds, the torchon is perfectly served with crusty French bread or petite toasts.

Lorelei Eurto: It occurred to me the other day that Autumn was in full bloom around us and I hadn’t sat down long enough to enjoy it! So Joe and I took the day and spent the day out and about. First we stopped in at Fly Creek Cider Mill. . . . Visit

The Andrews Family: . . . Last weekend, we went to Fly Creek Cider Mill with friends of mine from school: Tim, Kristin, and Jeremy. We also invited our Japanese friend Haruki along with us. The drive there was beautiful with crisp fall colors. I indulged in all of the Mill’s deliciousness – apples, cider, fudge, baked goods, wine, cheese, dips, sauces…. yum. And of course we fed the various ducks and geese there .   .  . Visit

Michelle in Utica NY: . . . From what I have heard this is perfect weather for the leaves to start changing big time, I can see it starting to happen and the air has that fall crisp smell. Makes me want to go to Fly Creek Cider Mill in Fly Creek and get some fresh cider, some Macintosh apples and cheese.   .   Visit

The Borns in Brooklyn: After our swim, we went to the Fly Creek Cider Mill, drank some cider, drank some hard cider, ate lots of samples, and bought some too. The play area was only for children 2-8, but we wanted to play anyway! .  .  . Visit

Dee Dee from the Gulf Coast: One thing I’m looking forward to when we visit upstate New York in a few days, is the Fly Creek Cider Mill & Orchard. This place has been a popular attraction for years and hasn’t changed in the least since we have been visiting there. The Cider Mill is an old wooden store building with hardwood floors, packed with all sorts of good quality merchandise .  .  .  Visit

Gold in the Clouds Blog: So while Dave played taxi-driver all afternoon and managed the home, my sister and I enjoyed a beautiful drive down to the Cooperstown area (about 1 hour southwest of Albany) to attend the Cider Mill Festival at Fly Creek Cider Mill and Marketplace. . . Visit

Gourmet Christmas Gift BasketsDateline Canandaigua – The fall has arrived, and with it the annual grape harvest and crush in New York’s wine country. Tons of ripe grapes of many varieties and colors are picked and delivered to wineries in all regions—Long Island, the Hudson Valley, Finger Lakes, Niagara Escarpment, Lake Erie, and Thousand Islands. There’s no better time to celebrate New York’s bounty of fine wine than October.

Throughout the month, more than 115 restaurants and 150 wine stores throughout New York State will be celebrating New York Wine Month by offering their customers hundreds of fine New York wines from over 30 wineries.

“October is the perfect month for celebrating New York wines,” said Jim Trezise, President of the New York Wine & Grape Foundation which is orchestrating the month-long promotion. “The 2007 vintage was the best in many years, and most of the wines are now available. It’s also prime time to visit wine country, combining the excitement of the harvest and crush with the beautiful fall colors.”

The promotion extends throughout the state except in New York City, where a separate “New York Wines & Dines” promotion is taking place. The major markets include Long Island, the Hudson Valley and greater Albany area, Syracuse and Utica, Rochester, Buffalo, North Country and the southern tier (Ithaca, Corning, Elmira).
