Steeped in tradition and legend, wassail dates from the 1300’s when sharing a pot of holiday wassail was a community event. The word evolved from the Old English “waes hael” meaning good health. It was the custom to drink and shout again “Waes Hael!” before passing the bowl on to the next eager participant. Wassailing became a tradition as carolers carried bowls of hot wassail for good health, refilling them from neighbor’s own simmering pots of wassail.

It is this celebration of friends and holiday spirit that prompts the Fly Creek Cider Mill to feature wassail and its preparation. “Wassail is a great use of our award-winning cider for experiencing the traditions of the past during the hectic holiday season,” states Mill co-owner Brenda Michaels. Mill visitors learn how to prepare wassail several different ways with a variety of different pre-mixed spice blends. Available too, are wassail gift mixes, a good way to spread holiday cheer with friends and family.

Our favorite Holiday Wassail recipe: Holiday Wassail/Hot Mulled Fly Creek Cider

  • 1/2 cup brown sugar
  • dash or two of nutmeg
  • 1 tsp. Whole Cloves*
  • 3 inch cinnamon stick*
  • 1 tsp. Whole Allspice*
  • 1/2 Gallon Fly Creek Cider

Combine Fly Creek Cider Mill CIDER and all ingredients in a large saucepan or crock pot. Slowly bring to a boil. Cover and simmer 20 minutes. Remove spices. Drop orange and apple slices on top. Simple, easy and delicious! Serves 8 people.

The Daily Star published an article about Cider Mills in New York and talked to Bill at the Fly Creek Cider Mill. 

From the Article: According to Bill Michaels, vice president of family-owned and -operated Fly Creek Cider Mill and Orchard, the mill staff began pressing apples on Labor Day weekend and will continue to make cider through Thanksgiving. “We produce over 20,000 gallons of cider annually,” Michaels said. “We freeze 5,000 gallons to sample and sell to our spring summer and December visitors as well as our online store, year-round customers.”

Fly Creek Cider Mill, located just a few minutes from Cooperstown, and in its 152nd year, is one of the area’s largest cider producers and a premiere tourist destination. It was purchased by Charles and Barbara Michaels in 1962 and was sold to son Bill and his wife, Brenda Palmer-Michaels, in 1999. Since retaining ownership, the younger Michaelses have added many features including gourmet food, a bakery and even a winery. As a licensed New York State Winery, the mill has developed hard ciders and apple wines. “We are offering these winery beverages as a return to the cider making traditions of the past here at the mill,” Michaels said. The promotion extends throughout the state except in New York City, where a separate “New York Wines & Dines” promotion is taking place. It seems as though Turning Stone’s Atunyote Golf Club has more than just plush greens. Ray Halbritter claims it is simply good luck to play at Turning Stone.

  • 4 chicken breasts, skin on
  • 1 cup apple cider
  • 1/2 cup maple syrup
  • 2 tablespoons lemon juice
  • 1 teaspoon poultry seasoning
  • Salt and pepper to taste

Gourmet Food BasketsCombine the cider, syrup, lemon juice, seasoning – marinate the chicken breasts for at least 1 hour. Remove the breasts from the marinade. Season with salt and pepper and place on prepared grill. Grill, turning occasionally, for about 20 minutes or until cooked through and nicely glazed. While the chicken is grilling, cook the marinade over low heat until syrupy. Pour it over the grilled chicken and serve.
